This is the wisniak I put up about four years ago. It’s a traditional Ukrainian cherry vodka, served for the winter holidays, and the first element of my legal last name (Wishnevsky) means “wild cherries”. The various forms of that name are one of the most common Slavic last names. (Wisniowski, etc, various spellings dependent on ethnicity.) They also make a cherry soda in Pennsylvania called wisniak. Delicious. I can only make it when I can find whole sour pie cherries with the pits in. My friend Stella gave me these cherries from her tree back in 2017ish and I brought them home from Minnesota in a cooler. The last batch I made before that, I served to the guests at our wedding. Traditionally you make it in June when the cherries are ripe, then drink it at Christmas. It’s even better when it’s been aging for several years. I just strained the cherries and pits out of this year’s batch, because I got some sour cherries this year from a local orchard. You have to be fast! Competition is fierce!
