Made by 5th grade a welcome fall Pepita Pesto Pasta. . . Today I taught boiling + herb id class. For which I designed 4 stations to make different Pestos ( Basil, Kale , Spinach, nut + seed free), some of which was harvested in our greenhouse then i tasked them with also making perfectly al dente pasta - whole wheat, lentil and brown rice pasta (some adults can’t do this!), then garnish with items like heirloom tomatoes, cherry tomatoes and pepitas (pumpkin seeds) for our fall touch. . . 30 students, 45 minutes, 4 perfect pastas and Pestos. My greatest joy is them being so pleased and blown away with the flavors they can quickly and naturally create. . . I also set up a pantry on my cart and ask them to “shop” for the correct items they need. 30 students now know they can make this dish start to finish on their own!
