b-ritt-thuggin asked you: hello, i just saw a post about using zucchini instead of pasta for lasagna, and was wondering if that would actually work? the pasta helps to hold it together by absorbing most of the liquids, wouldnt it just fall apart? would eggplant be a better sub? it looked delicious but it also looked like it would fall apart the second my fork would touch it. Hi there! I personally don’t care for zucchini and would go with the eggplant (baked eggplant parmesan, oh so good.), but texture wise I think it will work. Zucchini cut into slices lengthwise has long been a stand in for lasagna sheets - you’ll just be cutting into it more easily than you would a pasta, but it’ll still hold its shape, if that makes any sense.
