I have been sugar & refined food free for almost five months. Besides Jacks Pizza and cereal, what I miss most is bread. I haven’t found a bakery nearby that bakes anything I can eat, and since my cooking skills require me to keep a step stool under the smoke alarm at all times, I had reluctantly accepted that bread would just not exist for me. Then I stumbled across a recipe for no-knead, no-sugar-added bread, and figured what the hell, I’ll give it a try. I always like a challenge, even if it results in utter failure. So I was amazed when, instead of smoke alarms and a deflated ball of dough, I got this beautiful delicious masterpiece!! And it was even easier to make than a Jacks Pizza. Thank you @pinchofyum for introducing me to this and bringing bread back into my life … Technical details: I don’t have a Dutch Oven, but two cake pans covered in tinfoil worked like a gem. I substituted whole wheat flour and used active yeast instead of instant.
