I asked Gerald what he was in the mood for today and this was it! A tofu scramble sandwich! It was super delicious. It reminded me of childhood with the soft bread, soft “egg” like consistency. I had mine with lettuce, I loved the fresh crisp bite. This is a really easy recipe, make your favorite tofu scramble, add other favorites like vegan cheese, sauces or fresh veggies + bread and mmmm so good. Nom nom nom.
