Part of the reason I wanted to try this recipe is because it’s stuck with me ever since I read it - I’m not a huge fan of oatmeal raisin, and only after reading the commentary did I realize why: the whole salty-cookie-base, not-super-sweet-raisins deal. We’ve actually had the supplies for this in the pantry for a few solid months, but only really got around to doing it today. Unfortunately the first bath (that larger batch in the photo) is a bit… oopy. Dad’s guess is that aside from being somewhat undercooked, we probably should have folded the batter one more time after getting it out of the fridge the first time (I think we left it to chill a bit too long too). The second batch is also a little soft, but turned out much better still. We put them both in for 11 minutes (the medium amount recommended), so I’m guessing maybe putting them in for a little bit longer, maybe 13 to 15 minutes, would have been better. Taste-wise they’re pretty good! It reminds me a lot of the cinnamon-butterscotch pie I made a while back, albeit it’s cinnamon-maple syrup. It’s got that same sort of spiced-sweetness to it, and the raisins and oats help to balance the sweetness out with… I guess I’d call it “dryness”, sort of. They’re very interesting. Very very interesting. @returnerofthesky tried their hand at Rimmen Raisin Cookies! I’m sorry they didn’t cook easily for you (I think my oven during that era of recipes ran hotter than most and threw off some baking times slightly, at least that’s the story I’m sticking to lol!) I’m glad the recipe cast a little ray of hope over the plight of raisin cookies. -- source link
