In my eternal quest to find substitutes for rice that are delicious, I’ve discovered spaghetti squash does the trick nicely in stir fry. Half of a spaghetti squash One bell pepper One sweet onion Garlic 2 tbsp vegetable oil Marinade of choice (I used teriyaki) Make as you would any stir fry, just adding the spaghetti squash immediately after the bell pepper. The above makes 2 servings at ~260 calories each. -- source link
