I hate shellfish. I could never understood how people can swallow oysters and go HMMM YUMMY. My mother let me eat it when I was young and I almost threw up. I tried from time to time but never worked. . But these days health comes first, especially for Noa. The common commercial oyster sauce is disgusting, it only contains around 0.4-0.5% oyster essence and the rest consists of thickners, flavor enhancers and other things. Thickners are particularly concerning, because you will need a lot of that to make such thin liquid come out that sticky. Starch and gums can be persorbed into your blood stream and could cause embolism in small vessels. . You can see how little I can make from cooking 6kg of frozen oysters! and this is really pure essence.
