Ramen (ラーメン) from Ichiran (一蘭) in Ueno (上野). You buy a ticket for your ramen from a vending machine (you can also buy more noodles, a boiled egg, extra roast pork (チャーシュー · CHASHU, etc.) and you customize your ramen! On the sheet pictured (you can request an English version), you can select how much garlic and green onions you want, if you want your noodles firm or soft, and how spicy or oily you want it. It’s a ramen made just for you! (They do, however, recommend selecting all the middle choices for first-timers.) They only offer a pork bone (豚骨 · TONKOTSU) broth (hence the milky color); no miso or shoyu flavor. This place is very popular in Tokyo (though it originated in Fukuoka), and they even have a listing of the busiest times of day to help customers avoid crowds!
