People who want to reserve a table want to eat at that restaurant, and are usually in a mood to celebrate something, and that usually translates to splurging a bit more in terms of price and/or quantity than usual.(Caveat; Reserving a table does not release you from the strong obligations to Be Nice To Your Waitstaff.
