Kick off spring with this colorful pasta salad, full of fresh ingredients.Recipe and Photo Credit: Barilla Executive Chef Lorenzo BoniOrzo and Wild Rice Salad with Crunchy Vegetables and Fresh Alfa-Alfa SproutsIngredients ½ box orzo, cold, slightly undercooked (about 1 minute less than indicated in package directions) and tossed with a small amount of extra-virgin olive oil2 cups wild rice, cooked1cup raw celery, diced1 cup carrots, diced1 cup Vidalia onion, diced1 lemon, juiced5 tbs. extra-virgin olive oil4 tbsp. pomegranate seeds½ cup alfalfa sproutsSalt and pepper, to taste DirectionsCook orzo and rice separately. Drain and allow to cool down.Meanwhile, heat a medium skillet and sauté diced onions over medium-high heat for 2 minutes. Add carrots and celery and sauté for 1 more minute. Season with salt and pepper and allow vegetables to cool down.Once cooled, toss all vegetables with rice, orzo, extra-virgin olive oil and lemon juice.Top with pomegranate seeds and alfalfa sprouts before serving. -- source link
