Apple Cinnamon Pancakes with Maple Butter: 1 cup flour 1 Tbsp sugar 2 tsp baking powder ¼ tsp salt 1 tsp cinnamon Mix together first 5 (dry) ingredients. ½ cup unsweetened applesauce 1 cup unsweetened coconut milk 2 Tbsp cooking oil Stir together 3 wet ingredients in a separate bowl. Add wet ingredients to dry ingredients and mix until combined. Pour about 1/3 cup batter into heated skillet. Cook for about 2 minutes on first side or until batter bubble pop and edges are beginning to firm. Flip and brown for 1 minute more. Transfer pancakes to plate and top with maple butter or anything your little heart desires. Makes 7-8 medium pancakes. -- source link
