All the quarantine crumpet pictures were making me jealous. So I made my own. 4 eggs, 4oz cream cheese, ½ cup almond flour, 1 tsp baking powder, 1 tbsp erythritol and some orange zest. Blended in a jug with a stick blender and then fried. I used a bit of fresh orange juice and butter as a syrup.
