Guacamole recipe #1, from my school’s international cookbook:1 In a molcajete or with a regular mortar and pestle, grind together the onion, chiles, cilantro, lime juice, and salt until smooth.2 Cut the avocadoes in half. Remove the pits, scoop out the flesh, and mash roughly into the chile mixture in the molcajete.
