Things I Cooked in 2020Like many of us, I cooked a LOT in 2020. Like, a lot a lot. But I went through phases where I didn’t take a ton of photos of food… or if I did, it was mostly of takeout food when we got it! So, this collection of photos is the best I could do to represent allll of the time I spent in the kitchen in 2020.Early on in the year, I discovered the magic of How Sweet Eats’ Skillet Enchiladas. This method is genius: you prep the filling, sauce, and final enchiladas all in the same skillet, AND bake it in the skillet too! This recipe is suuper customizable, and over the course of this year I made both a chicken and beef version, with various veggies in the filling. (I also realized the secret to getting the restaurant-style fine ground beef enchilada filling that I love: cook/crumble your beef, cool it a bit, then pulse in the food processor until desired consistency. I’ll never go back.)Right at the beginning of Quarantine I made a big pot of Plays Well With Butter Best-Ever Bolognese. This fueled maaany pasta dinners, and it freezes very well.2020 became my Year of the English Muffin. I experimented with a couple different recipes, but settled on Budget Bytes English Muffins for its relative ease and tasty results. I easily made 6-7 batches of English muffins throughout the year, maybe more.We made all of those English Muffins into breakfast sandwiches. Soooo many breakfast sandwiches! We also discovered the Aldi breakfast sausage patties in the freezer section: they make your breakfast sandwich taste like it came from a fast-food joint in the best way possible.As we neared the 1-year anniversary of departing for our European Escapades in 2019, I planned a menu from each country we visited to celebrate! I attempted to make Portuguese Pastel de Nata, which turned out pretty tasty.Morocco: Taktouka (stewed bell peppers & tomatoes), Zaalouk (mashed eggplant with spices), Couscous and Khobz (bread).The Crispy Cheesy Pan Pizza from King Arthur Flour is incredibly easy and very delicious. Made several of these during the year.When we went home to visit family this summer, I put together a beautiful Caprese salad with tomatoes and basil from my Dad’s garden.This was my first year cooking the entire Thanksgiving meal myself! I reveled in the chance to make everything exactly how I like it, and didn’t go overboard with difficult recipes so that I was able to execute everything with little stress. Very proud of how it turned out.Checked off one more cooking bucket list item before the year ended: homemade potstickers! We used this Potsticker recipe from Damn Delicious and I enlisted Page to help me fill & fold the giant batch. Having our freezer stocked with homemade dumplings has been an awesome treat. -- source link
