Vegan Cookie Dough FudgeIngredients¾ cup salted peanuts¼ cup raw almonds10 pitted dates1 can cooked lentils or if you’re desi, you can prepare toor daal, less than 1 cup1 teaspoon vanilla½ cup dairy-free mini chocolate chips (certify that they are vegan)DirectionsFood process all nuts until buttery. Add the dates and grind again for about a minute.Add in the cooked lentils and vanilla and turn on for another minute until smooth and dough-like.Put the container in the fridge for 15 minutes to chill.After the dough has chilled for 15 minutes, mix in ¾ of the chocolate chips, leaving the rest to press into the top.Spread the dough into an 8x8-inch pan, add the remaining chips, and place in the freezer overnight.Remove from the freezer and cut into squares. -- source link
