Lemon Zest. ½ cup almonds¾ cup cashews1¼ cup packed dates, pitted2 tbsp fresh lemon juice1 tsp fresh grated lemon zestPlace the nuts in a food processor or high-powered blender and process until broken down.Add dates, lemon and sea salt and continue blending until it forms a dough.Remove from blender and press into a pan lined with wax paper. Alternatively, simply roll the dough into balls.Place in the fridge for 1-2 hours.Cut into bars and either wrap individually or place in an air-tight container.Store in the fridge.Adapted via RunningonRealFood -- source link
