I haven’t made this type of cake (well, technically it’s a dessert, but I call it “cake” anyway ‘cause it’s, you know, still kind of cake) for so long, I was worried it’s not going to work. Will it set or not kind of worry. But it did and it was good. From bottom to top: coconut dacquoise, pineapple and papaya marinated in lime juice with fresh ginger, mango and banana crème brûlée insert, passion fruit mousse topped with passion fruit glaze. Chocolate discs are banana flavoured milk chocolate. -- source link
