What a difference a pie makes. It’s been over a year since I baked a pie. This week I had two pies to make — one for a dessert of the month auction item for Penny’s school, the next for a dinner party. The winner of the auction item requested strawberry rhubarb pie. I baked the top one first, and as I rolled out the dough, I got frustrated when it cracked or when it refused to make the perfect round shape. For the second one, I worked the dough as I flattened it, turning it over to even out the differences in texture between the top and bottom, my fingers sealing cracks at the edge to guide it into the shape I wanted. You can see that it turned out much better. This might be the prettiest pie I’ve ever baked, although I won’t know how it tastes. Baking, like life, is informed by the accumulation of experience. -- source link
