fitandhealthys: letscookvegan: Choc-Mint Nicecream Popsicle by @healthandfitnessbyemma What You’ll Need: For the filling: 1 cup of cashews (soaked for 4+ hours, then drained and rinsed) ½ cup of soy milk ¼ cup of maple syrup 1 tablespoon of lemon juice 1 tablespoon of melted coconut oil ½ teaspoon of vanilla bean paste 1 teaspoon of peppermint extract Peppermint food colouring (optional) For the chocolate: 100 grams of 85% dark dairy-free chocolate 2 tablespoons of coconut oil 1 tablespoon of maple syrup . How To Make: 1. Combine the filling ingredients in a high-speed blender until smooth and creamy. 2. Pour into a silicone popsicle mould and place in the freezer for 6+ hours or overnight. 3. Using a double boiler, melt the chocolate, coconut oil and maple syrup (whisking until smooth). 4. Set the chocolate aside to cool for about 15 minutes then transfer to a tall glass. 5.
