Confetti Cupcakes Ingredients: 1 ¼ cups cake flour ¾ cup sugar ¼ cup butter ½ cup plus 2 tbsp buttermilk ¾ tsp baking powder ½ tsp salt 1 tsp vanilla 1 egg plus 1 egg white ¼ cup plus 1 tbsp rainbow sprinkles Instructions: Preheat oven to 350˚. Line a muffin tin with cupcake liners. Beat all ingredients together except for the sprinkles. When thoroughly mixed, gently fold in the sprinkles. Stir briefly, as the colours will start to run pretty quickly. Pour batter into cupcake liners. Bake for 20 minutes, or until done. Let cool completely before frosting cupcakes. -- source link
