Waldorf Astoria Red Velvet Cake Ingredients: ½ cup butter 1 ½ cups granulated sugar 2 large eggs 1 tsp vanilla extract 2 oz. liquid red food colouring 2 tbsp cocoa powder 2 ½ cups all-purpose flour, sifted 1 tsp baking powder 1 tsp salt 1 cup buttermilk 1 tsp baking soda 1 tsp white vinegar Instructions: Preheat oven to 350˚. Grease two 9-inch cake pans with shortening and line bottom with parchment. In a large bowl, beat butter and sugar together until fluffy. Add the eggs and vanilla and mix well. In a small bowl, stir together food colouring and cocoa powder until smooth and then add to the butter mixture. sift together flour, baking powder, and salt. Add flour mixture to the butter mixture in three additions, alternating with the cup of buttermilk. Begin and end with flour. Mix well. In a small bowl, combine baking soda and vinegar. Mixture will bubble and fizz. Pour into the cake batter and mix until well incorporated. Divide batter between the two prepared pans and bake for 25-30 minutes, or until the cake springs back when pressed in the center. Let cakes cool slightly in pans. Run a knife along the edge of the pans and turn cakes out. Let cool completely before icing. -- source link
