Dreaming about this raw vegan pumpkin pie cheesecake I made last thanksgiving. I’ve never really believed in celebrating thanksgiving. Why dedicate only one day per year to being thankful for what we have? Not only that, but thanksgiving is rooted in taking what we want from others while hurting them in the process. It all seems a bit contradictory to me. Instead I have a gratitude practice that I focus on each day, feeling grateful for everything I have, even the seemingly “small” things. I’m grateful for the amazing food I have access to, my friends, community, family, clothing, my home, and the ability to inspire thousands of people ❤️ it’s such a gift!
