The candles soak up any energy you put into it like a sponge. When you do a spell, the flame pulls in the energy you’re sending out and it goes through the candle. Then, with the flame’s own energy, your energy, and the candle’s color/shape energy, the smoke from the flame brings up the energy and sends it out into the universe. When you blow out a candle, you’re forcing the energy away. Look at the flame and smoke when you blow on a candle. It goes in whichever direction you blow it in, which is away from the direction you want it to go (up - the universe).When you snuff it out with a snuffer or your fingers, you are telling the candle’s flame and energy to stop flowing, telling it you are done with your spell (rather than pushing it in a different direction when blowing it out). Also snuffing it is more gentle on the flame. If you watch, it slowly goes out when you snuff it, rather than it being forced away from being harshly blown out.Of course, not everyone does this. Some people just blow it out because they don’t see a difference. But I (and everyone I know who practices witchcraft) learned to snuff it instead of blow it.Sometimes it’s actually good to blow out a candle; I was once doing a healing spell for a friend who was pretty far away.
