PALEO BACON AND BEEF STUFFED PEPPERS6 Bell Peppers6 slices bacon- crumbled1½ lbs ground beef1/3 cup almond meal2 cups broccoli slaw (undressed)1 cup shredded carrots½ cup diced onion1 can fire roasted tomatoes (14.5 oz)1½ Tbsp. of coconut aminos or gluten free Worcestershire sauce1Tbsn. Marjoram1 tsp garlic powder1 tsp onion powder1 tsp chili powder1 tsp curry powderDirections1. Cut tops from peppers and remove seeds and membranes completely. (I use a melon baller for this step) 2. Fry bacon in a cast iron skillet until crisp. Remove to paper towel to cool. 3. Add ground beef to the bacon grease and brown. Cover skillet with a lid to speed the process.4. Crumble the bacon and add it and all of the remaining ingredients (except the peppers – ha!) to the ground beef and mix thoroughly5. Spoon the mixture into the Peppers, packing it firmly. 6. Arrange the stuffed peppers into your crock pot and add 1/3 cup of water around the bottoms of the peppers. Cook on low for 6 hours. -- source link
