Paleo Creamy Baked Chicken with Broccoli and Cauliflower. This easy recipe also contains onion, garlic, Bacon, chicken broth and coconut milk and nutritional yeast.Ingredients2 - 2.5lb Boneless skinless Chicken Breast6oz Bacon Fried and crumbled2 Large Broccoli crowns cut into florets1 head Cauliflower cut into florets1 - 2 Tbsp Extra Virgin Olive Oil if needed1 can Coconut Milk1 cup Organic Chicken Broth 1/8 tsp Sea Salt1/8 tsp Black Pepper ½ teaspoon White Pepper3 cloves Garlic minced1 large Onion chopped1 Tbsp Herbs de Provence¼ cup of Nutritional yeastDIRECTIONS:Preheat the oven to 425F. Place the broccoli and cauliflower florets in a large glass or ceramic baking dish. Do not oil the dish. Lightly season with salt and black pepper. Roast for 35 minutes until the broccoli is becoming around the edges and the Cauliflower is starting to turn golden brown.In a large frying pan, fry the bacon until crispy. Set aside to cool and then crumble it.Put the chicken breasts into the pan with the bacon grease and lightly brown on both sides. Remove the breasts to cool and add the onions and garlic to the pan. Saute until the onion becomes translucent. Set aside with the bacon.Cut the chicken into bite sized pieces and return to the pan to further brown on all sides. Add some of the olive oil to the pan if it is needed. (I do it this way to avoid cutting up the raw chicken. You can just cut the raw chicken into cubes from the start and brown. I just like to avoid the mess from the raw chicken on my cutting boards)Remove the chicken and set aside. Add the coconut milk and chicken broth to the pan and simmer for 5-10 minutes on medium heat, scraping the bottom of the pan from time to time. Add the salt, black and white pepper, and the Herbs de Provence.The Broccoli and Cauliflower should be finished in the oven about this time. Remove the baking dish from the oven and combine all the ingredients together, stirring to coat and mix well. Sprinkle the top with the nutritional yeast and return to the oven for 15 minutes. -- source link
