SIMPLE CHOCOLATE CAKE Preheat oven to 180C, line a fairly deep 8-inch loose-bottomed cake tin. Beat together 8oz of soft dark brown sugar and 8oz of margarine until light and fluffy. Gradually beat in 4 beaten eggs, mixing well after each addition. Fold in 7oz of self-raising flour and 1oz of cocoa powder, with ½ tsp of baking powder, and 1 tsp of instant coffee dissolved in a splash of hot water. Add a little milk to make a smooth consistency. Bake for 30-40 minutes. Watch it carefully, and remove from oven as soon as centre appears solid (using skewer test). Err on the side of wobbly, not overdone. Stick fancypants freeze-dried raspberry cake sprinkles (from the baking bits and bobs aisle) on the top with a little chocolate melted with a little butter. -- source link
