Old Blue Raw HoneyLocation: Philomath, ORHenry and Camille Storch are doing their part to save the bees. On our recent trip to Oregon, we drove a couple hours outside of Portland to a town called Philomath to see how they keep their thriving hives. Camille and Henry have a good thing going with their company Old Blue Raw Honey – while he tends to their hives and makes their single origin honey, Camille manages the business, the Old Blue Raw Honey blog and her own blog, Wayward Spark. We followed Camille as we drove out to see the hives housed in stacked bee boxes, and to get a glimpse of how Henry cares for each and every one of them. Knowing what trees and flowers blossom nearby is crucial to their work. Their process is different than commercial honey-makers, as they harvest according to the seasons, never mixing batches but making sure that when the clary sage plants are in bloom, that honey is bottled in its purest form. Other honey makers will combine the honey from a given season and label it “wildflower,” losing trace of the terroir that gives each varietal its own very specific flavor. When it came time to taste the honey, Camille opened her trunk like a traveling salesman, only to reveal a box full of single origin honey. Poison oak tasted like bubble gum, and Clary sage had the flavor of toasted marshmallows. An eye opening experience indeed! -- source link
