Founder Tony Shure’s “Van Salad”Location: Seattle, WAChopt Founder Tony Shure had a dream…well, he had a couple dreams: One was to open a salad restaurant and change the way America eats. The other was to own his very own camper van and take it on the road. Lucky guy, it seems all his dreams have come true. In an effort to really understand the Pacific Northwest, the landscape and the food of the region, Shure drove his van along the coast, hitting-up every farmers market and specialty food shop along the way. Seattle’s Pike Place market is touristy, sure, but the quality of the fish, the fresh flowers and the veggies was legit. Tony fell in love with the hot-smoked salmon from Pure Fish Market, a family run business in the middle of the fish-tossing chaos. He ordered some to be Fedexed to his mother back in NY, and bought a generous fillet to bring back to the van, along with some heirloom chicory, dill flowers, snap peas and pickled onions. You see where we’re going here? With these stellar ingredients, “van salad” was born. Composed in the palm of one’s hand, van salad is a lettuce wrap filled with the most delicious things you can find on the road. Make a simple vinaigrette in a mason jar, drizzle it on top, and enjoy.
