Keto Chorizo Zucchini Hash and Eggs! Delicious! 2-3 zucchini’s grated and all water pressed out. 3-4 Chorizo sausages ½ small onion diced 3 eggs 2 oz shredded cheddar or cheese of your choice 1 tbsp butter Tsp garlic powder Salt & Pepper to taste Preheat oven to 360 degrees. In a cast iron skillet I grounded up the chorizo until brown around 5-7 minutes. Added in onion and cooked for a minute then added in zucchini.. Tossed that around and let cook about 3 minutes. Added butter and seasoning. Stir and separated 3 bowl like sections in the skillet to crack the eggs into. Grate cheese over hash. I then threw it in the oven uncovered for about 10-15 minutes until eggs looked cooked. Let sit about 5 minutes and serve. Makes 3 servings. -- source link
