Citrus & Chocolate Tarts Chocolate Cases: • ½ cup of almonds • ½ cup of pecans • 2 tbsp of desiccated coconut • 1 cup of medjool dates • 1 ½ tbsp of coconut oil • 1 tbsp of @lovingearth raw cacao powder • pinch of sea salt Citrus Filling: • 1 cup of raw cashews (soaked in boiling water for 15mims to soften) • ½ cup of coconut cream • ¼ cup of fresh citrus juice (I used lemon, orange & lime) • zest of 1 lemon • 1 tbsp of maple syrup • a few drops of vanilla essence Method: • blend nuts until fine and place into a bowl • blend medjool dates until a paste forms and add to bowl with nuts • add remaining ingredients and mix together until well combined, may need to use hands! • press into tart cases or a small muffin tray • refrigerate while making filling • add all ingredients for filling to blender until smooth and creamy • add filling to cases and refrigerate for 2 hours or until set! • Top with slices of lime and lemon -- source link
