O N E - P O T M E A L When it comes to meal prepping, I’m not really a fan of making everything on a Sunday and eating it throughout the week. Because I have to cook dinner for everyone most nights, I just make enough for lunch the next day. This one’s a one pot tomatoey chicken and vegetable dish.Fry 600g of chopped chicken with some onion. Season with salt and garlic. Once the chicken has browned add 1 punnet of pre-chopped stew vegetables (potatoes, carrots, baby marrow, mushrooms etc) and cook until they’ve browned just a bit. Add ¾ tin of tomato purée and ½ a tin of chopped tomato along with 2 cups of water. Add about a half a tablespoon of dry basil, oregano, bay leaves, garlic each and a chicken stock cube. Leave to simmer for about 45 minutes or until your potatoes are cooked through and the mix has taken on a thicker consistency.
